Miso Itame
味噌炒め

Summer time classic!
Serve this with steamed rice and you will have a healthy meal.

Servings: 3

Ingredients :

1 medium Japanese/Chinese eggplant (about 200 grams)

200 grams pork (belly or loin, thinly sliced)

½ medium green pepper, cut into wide strips, about 12

½ medium yellow onion, cut into cubes or wide strips

¼ cup miso (white, yellow or red)

3 tablespoon sake

3 tablespoon mirin

2 tablespoon sugar

2 teaspoon soy sauce

Oil for cooking
Directions:

In a medium bowl, combine miso, sake, mirin, sugar and soy sauce.
Note: If using a lean piece of pork such as loin, sprinkle the meat with one tablespoon of sake and set it aside for 5 minutes.
Heat a large frying pan (or stir fry pan) on medium heat. Add about ¼ cup of vegetable oil and cook eggplants. When the eggplant is soft, take it out on a paper towel. Set it aside.
Using the same frying pan, stir fry pork until it is almost cooked through, take it out on a dish, and set it aside.
Heat the frying pan again, add a teaspoon of oil and stir fry onion and pepper. When onion and peppers are soft, return the eggplant and pork to the pan. Add miso mixture, continue cooking on medium heat until the liquid is almost gone.
Sprinkle sesame seeds and garnish with chopped chives (optional). Serve hot or room temperature with steamed white rice.

It's the season for Soba Noodle Salad. Serve this salad with grilled meat or fish for healthy and delicious meal.

Servings: 4 people
Ingredients :

250 grams dried soba noodles

1 cup Miso dressing

2 tablespoons Japanese Mayonaisse (optional)

Chili oil (optional)

About 3 cups of fresh vegetables: lettuce, tomato, peppers, onion, cucumbers, carrots (cut into Julianne)

Lemon

Sesame seeds to garnish

Miso Dressing:

⅛ cup toasted sesame seeds, grounded

1 ½ tablespoon sugar

¼ cup soy sauce

¼ cup rice wine vinegar

¼ vegetable oil such as soybean salad oil

2 tablespoon sesame oil

2 tablespoon miso

Directions:

Cook soba noodles according to package directions. Drain the noodles and wash them under cold water. Drain well and keep them in the fridge. Note: Do this ahead of time, so the noodles are not too wet when mixing with dressing and vegetables.
Make the sesame dressing by mixing all the ingredients and adding mayonnaise and chili oil.
Prep the vegetables by cutting them in julienne, except for the tomatoes. Dice tomato or for cherry tomatoes cut them into halves if using.
In a large mixing bowl, add noodles, vegetables and toss them together with miso dressing.
Sprinkle sesame seeds on top and serve them cold with lemon wedges.
