The Japanese egg sandwich, or Tamago Sando, is a beloved comfort food that appeals to both children and adults. Its soft, creamy texture comes from hard-boiled eggs mashed with Japanese mayonnaise and sandwiched between slices of fluffy white bread.

With only five ingredients, this simple recipe is quick and easy to prepare. It’s perfect for a speedy lunch, and I often made them for my children when they were young.

Now, I lead group tours to Japan, and my guests always enjoy the Tamago Sando from convenience stores. It seems that everyone finds comfort in this simple sandwich.

Note: Please feel free to jazz it up by adding lettuce, sliced cucumber, sliced ham, and pickles.

Tamago Sando (Japanese Egg Sandwich)

The Japanese egg sandwich, called Tamago Sando, is made with hard-boiled eggs mashed with Japanese mayonnaise and served between slices of soft white bread.

Ingredients

  • 4 medium eggs
  • 1/3 cup Japanese mayonnaise
  • salt and pepper
  • 6 slices white bread You can make 4 crustless small sandwiches plus a regular sandwich with these ingredients.
  • Optional ingredients: Lettuce, sliced cucumber, pickles, sliced ham

Instructions

  • Gather the ingredients.
  • Place eggs in a small saucepan. Make sure they are completely submerged in cold water. Put the pan on the stove top with the egg and water. Bring to a boil, cover, and turn off the heat. Leave the pot on the stove for 13 minutes.
  • Immediately transfer the eggs to an ice bath for a few minutes.Peel the eggs by gently rolling them on a countertop to crack the shells.
  • Mash the eggs with a fork or use an egg slicer.Mix the eggs with mayonnaise, salt, and pepper.  Adjust seasoning if necessary.

  • Spread the egg mixture evenly on one slice of bread. Add any optional ingredients on top, and cover with the other slice of bread. Cut the sandwich in half and serve.
